Cinnamon Logs

This recipe goes out to my college baking buddy, Cassie. Whether we were baking on the dirty purple rug in her dorm room or in our first, real (if roach-infested) kitchen, nothing could stop us from making something tasty. And I promise to never tell anyone about the time we dropped the whole plate of brownies down the dorm stairwell... and still served them at the Christmas party. Oops!
Cinnamon Logs
Servings: 2 Dozen

Ingredients:
1 loaf thinly sliced white bread
1 8oz. package cream cheese-softened
1 egg white
1/2 cup powdered sugar
1 cup white sugar
1 Tablespoon cinnamon
1/2 cup butter-melted

Preheat oven to 350.
Trim the crusts off the bread.
Make sure to share the crusts ;-)
With everyone.
Then flatten the slices with a rolling pin.

Beat the cream cheese, egg white, and powdered sugar together until smooth.

Spread 1 side of each slice with the cream cheese mixture

And then roll up.

Mix together the cinnamon and sugar.

Dip each log into the melted butter and then roll in the cinnamon sugar mix.

Place on a lightly greased baking sheet and bake 15 min.
Serve immediately or freeze and warm up later.
They are also great for sleepovers and can be made like an assembly line. It's a fun way to get everyone involved in this tasty treat.
